Did you know that most of the best wines never make it to your local store or favorite restaurant? This fact is because they are handcrafted in limited quantities.
At Tarpon Springs Castle Winery we make our wines in that Old World Tradition producing just a few thousand cases of our excellent wines each season.
Let me introduce you to our winemaker, Joseph Antonio Gevoni Machia, or Joe Marks as most of us call him. His wife, Diana, is his right hand “man”. Together they make the wine. These owners take great pride in their product as this is a dream that took 6 years to fulfill as they built the building and grounds all by themselves. They did not do the slab as it is too big to get level alone and they did not do the roof as both hate heights. The roof is 34 feet above the ground. But, everything else was done on weekends, 2 hours per night, and holidays. Both of the owners had good jobs in Tampa and worked hard during the day but “couch potato time” was their time to shape their dream.
This dream will be introduced in the coming months through this feature. The purpose of the “Notes From The Cellar Dweller” is to inform and educate our valued customers on wine.
This month the winemaker, Joe, wants to talk about the King of White Grapes.
This world class white grape, Chardonnay, is the king of the white grapes. This is one of the worlds most planted grape as it can grow in warm and cold climates. In France it is grown in Burgundy. In Italy, it is grown in the northeast part of the country. But, in California and other United States wine grape growing regions, where it is grown abundantly. Chardonnay exhibits the flavor and aroma of fresh apples, some degrees of vanilla and spices.
Tarpon Springs Castle Winery's Chardonnay exhibits all of the above plus a hint of toasted oak and pear flavors. My wife says that one taste of our Chardonnay and you will hear the cry for shellfish. I could go for oysters half shell with this wine or in vision cold cracked crab. Our son and his wife love it with a char-broiled steak. One taste and you are hooked and it is a stea1 at $17.95 a bottle.
